It looks like LePrince has given this classic American dessert a great seasonal makeover: we bet you have never seen a cheesecake like this!
Sembra proprio che LePrince abbia dato una svolta autunnale a questo classico dolce americano: scommettiamo che una cheese cake così non l'avete mai vista?!
AUTUMN ROSE
Ingredients:
-For the base
150 g assorted dried fruit
80 g honey
30 g butter
60 g puffed rice
-For the pumpkin preserve
250 g cleaned pumpkin
100 g sugar
1/4 vanilla pod
some drops of lemon juice
150 g water
8 g food grade gelatine
-For the filling
250 g mascarpone cheese
250 g cream cheese
250 g pot double cream
70 g sugar
-For the topping
500 g pears
1 pomegranate
unsweetened cocoa powder
-For the base

100 g sugar
1/4 vanilla pod

250 g pot double cream
70 g sugar
-For the topping
500 g pears
1 pomegranate
unsweetened cocoa powder
Method:
This recipe is a bit long, but don't worry: just follow my recommendations step by step and the result will be surprising!
Prepare the base: cook the honey and the dried fruit in a pot till the mix starts to brown; turn off the stove and immediately add all the butter and mix thoroughly till it is melted. While mixing add the puffed rice.
Put a 22cm round-mold for semifreddoes on a baking tray covered with baking paper. Pour the mixture into the mold and, when it is still warm, spread it down onto the base to create an even layer (a spoon will help you). Leave aside.
Prepare the pumpkin preserve: cut the pumpkin into pieces and cook in a saucepan together with sugar, vanilla, lemon juice and water. Cook over low flame till the water will completely evaporate and the pumpkin will be mushy. In the meanwhile, put the gelatine sheets into cold water to soften it. When the pumpkin is cooked, remove from the stove and mash it with a fork. Let it cool down for a while, then add the gelatine and mix till it is completely dissolved. Let it cool down to room temperature and leave aside.
Prepare the filling: in a bowl (in glass or metal) whip cream, mascarpone, cheese and sugar with an electric beater till it forms stiff peaks; now drizzle in the pumpkin preserve mixing from the bottom to the top with a rubber spatula. Blend until you obtain a smooth mixture.
Take the base and spoon the mixture onto the base, making sure that there are no air bubbles. Smooth the top of the cheesecake down with the back of a dessert spoon or spatula. Leave to set in the fridge overnight.
During this time, prepare the pear chips: cut the pears into thin slices using a slicer or a mandoline slicer. Position the slices on a baking tray covered with baking paper; bake at 95°C till they will be dry and crunchy. To speed up, often open the oven to let the steam out.
Un-molding and topping: bring the cheesecake out from the freezer; to un-mould, warm the sides of the mold with your hands or with a hairdryer, then gradually pull upwards. Slip the cake onto a serving plate and put it in the fridge for a while to revive. (If you have no time or you cannot resist to taste it, you can revive the cheesecake at room temperature: it takes less time). To understand when the cake is ready to be served, make a hole in the middle with a stick: if it dips without resistance, the cake is ready.
Garnish the top using the pear slices, placing them in order to form concentric circles resembling roses. Finish with pomegranate seeds and unsweetened cocoa powder.

1. If you do not have a round-mold for semifreddoes, you can use a springform pan.
2. Pear chips are a great snack alone too! You can preapre loads of chips and keep them in a hermetic jar to protect from moisture. They represent an ideal snack: pears are rich in fiber, they contain only natural fruit sugar and they are seasonal. Better than this!
3. This dessert allows you to organize yourself and plan in advance, because the cheesecake - kept in the mold - can be stored in the freezer covered with clingfilm for days. Therefore, you can garnish it at a later time.

Ingredienti:
-Per la base
150 g frutta secca mista
80 g miele
30 g burro
60 g riso soffiato
-Per la composta di zucca
250 g zucca già pulita
100 g di zucchero
¼ di stecca di vaniglia
qualche goccia di succo di limone
150 g acqua
8 g gelatina alimentare
-Per la farcitura
250 g mascarpone
250 g formaggio spalmabile
250 g panna fresca
70 g zucchero
-Per la decorazione
500 g pere
un melograno
cacao amaro
Questa ricetta è un po' lunga ma non spaventatevi! Se seguirete i miei consigli alla lettera potrete raggiungere un risultato sorprendente!
Procedimento:
Innanzi tutto prepariamo la base: in una pentola fate cuocere il miele con la frutta secca fino a quando inizia a diventare leggermente più scuro. A questo punto spegnere il fuoco e aggiungere immediatamente il burro tutto in una volta mescolando energicamente fino a quando si sarà disciolto. Aggiungere il riso soffiato sempre mescolando. Appoggiare un anello per semifreddi di diametro 22 cm su una teglia ricoperta con un foglio di carta forno. Versare immediatamente il composto nell'anello e stenderlo ancora caldo fino a coprire tutta la base, aiutandosi con un cucchiaio. Tenere da parte.
Proseguiamo con la composta di zucca: in una pentola cuocere la zucca tagliata a pezzetti con lo zucchero, la vaniglia, il limone e l'acqua. Cuocere a fuoco basso fino a quando l'acqua sarà completamente evaporata e la zucca sarà sfaldabile. Nel frattempo immergere i fogli di gelatina in acqua fredda per ammorbidirla. Quando la zucca sarà cotta, toglierla dal fuoco e renderla una purea usando una forchetta. Lasciare intiepidire per qualche minuto, quindi aggiungere la gelatina mescolando fino a completo discioglimento. Lasciar raffreddare fino a temperatura ambiente. Tenere da parte.
In una ciotola di vetro o metallo montare la panna, il mascarpone, il formaggio spalmabile e lo zucchero con una frusta elettrica. Quando il composto avrà un aspetto fermo e montato versare a filo la composta di zucca mescolando con una spatola di gomma dal basso verso l'alto per unire i due composti. Mescolare solo quanto basta a rendere omogeneo: in questo modo otterrete un composto liscio e non granuloso.
Prendere le base preparata in precedenza e versarvi sopra il composto di zucca. Livellare la superficie e congelare completamente in freezer per una notte intera.
Approfittatene per preparare le chips di pera! Tagliare le pere a fette molto sottili aiutandosi con un'affettatrice o una mandolina. Posizionare le pere su una teglia ricoperta di carta da forno. Infornare a 95°C e lasciare il forno fino a quando saranno diventate secche e croccanti. Per velocizzare questa operazione aprite spesso il forno per far uscire il vapore.
Composizione e finitura: togliere la torta dal freezer, scaldare le pareti dell'anello con le mani o con il phon e sfilarlo verso l'alto per liberare il dolce. Trasferirla sul piatto da portata e lasciarla rinvenire in frigorifero. (Se non resistete dalla voglia di assaggiarla o avete fretta potete farla rinvenire anche a temperatura ambiente: ci metterà meno!). Per capire quando la torta è pronta provare a forarla al centro con uno stecchino: se affonda nel dolce senza incontrare resistenza, il dolce è pronto. Guarnire il dolce usando le chips di pera, disponendole in modo da formare dei cerchi concentrici che ricordino delle rose. Ultimare con chicchi di melograno e cacao amaro.

Consigli:
1. Se non avete a disposizione un anello per semifreddi potete utilizzare una tortiera a cerniera privata del fondo.
2. Le chips di pera sono un ottimo snack anche da sole! Potete prepararne in quantità e conservarle in un barattolo ermetico al riparo dall'umidità . Sono lo spuntino ideale: sono ricche di fibre, contengono solo lo zucchero naturale della frutta e sono un prodotto di stagione. Meglio di così!
3. Il dolce non decorato, quando ancora è nell'anello, può essere conservato in freezer ricoperto con la pellicola per alimenti per diversi giorni. Potete proseguire con la decorazione in un secondo momento: questo vi permette di organizzarvi per tempo e giocare d'anticipo!
