COOKING WITH LE PRINCE #12
CHRISTMAS COOKIES
Ingredients:
300g soft butter
200g sugar
1g ginger
1g cinnamon
4g salt
half lemon peel to grate
Vanillin to taste
Nutmeg to taste
5 egg yolks
500g 00 flour
Mixed dried fruit to taste
Dark chocolate to taste.

Method:
With a fork mix together butter, sugar and flavouring, till obtaining a smooth mixture; then add the egg yolks and blend to make a smooth batter. Now add flour and knead with your hands.
Assemble the batter to form a block of rectangular shape and wrap it in clingfilm; let it rest in the fridge for 30 minutes.
Using a rolling pin, roll out the dough (5 mm thick). Cut out the dough using your favorite cookie cutters, or, if you have no pastry cutters, just use a glass. Then, with a straw, make a hole in each biscuit.
Place the cookies on a baking tray covered with baking paper; heat the oven up to 180 degrees and bake for 15 minutes: biscuits will have to appear browned and not burnt!
Let them cool down and then garnish with dried fruit and chocolate.
Cut out some 25 cm long satin ribbons and knot them in the buscuits holes.

Recommendations:
1. It is really important to let the dough cool down before rolling it out: warm dough crumbles apart when you try to cut is, and it is impossible to move the buiscuits on the baking tray.
2. To make chocolate buiscuit, just add 2 spoonfuls of unsweetened cocoa powder to the flour; in this case, use white chocolare for garnishment.
3. You can use these buiscuits as original Christmas place cards, writing your guests names on them!
4. You can wrap the buiscuits in trasparent plastic bags, or in decorated wooden or tin boxes: a delicious idea for your Christmas presents!

Italian Version:
BISCOTTI SOTTO L'ALBERO
Ingredienti:
300 g di burro morbido;
200 g di zucchero;
1 g di zenzero;
1 g di cannella;
4 g di sale;
la buccia di mezzo limone grattugiata;
qb vanillina;
qb noce moscata;
5 tuorli;
500 g farina 00;
qb frutta secca mista;
qb cioccolato fondente;

Procedimento:
